One of the most famous and beloved tastes of Edirne is Edirne Fried Liver (Edirne Liver). Also known as “Vat Liver”(Pan Liver) takes its name from the deep round metal tray in which it is fried. Some may also refer to it as “Leaf Liver” since it is cut in thin leaf-like pieces.
